Hi Bridget- Thanks so much for taking the time to rate the recipe and let me know you love it. I like to pick them up with my hands, but if you’re feeling more civilized than me, you can fry up your tortilla a little softer or let it soften a bit longer under the toppings. 🙂

First, I’d advise you to buy one 😀 I’m only half kidding. A heavy-bottomed skillet (like a cast-iron one or a well made but not necessarily expensive one) is worth its weight in gold. It creates more even heat distribution which cooks your food more evenly. If you can’t grab one, I’d say just watch your food more closely as it’s likelier to have hot spots in the pan or scorch more easily.
