It’s a product sold in the US that is a mixture made of equal parts of whole milk and light cream. You can definitely substitute whole milk or light cream or make your own half and half! Look out, though, half and half is lovely in coffee and tea… You might form a habit 😀

I think they would freeze beautifully. That being said, I haven’t actually TRIED freezing them, so I’d caution you to perhaps try it with a couple from a single batch first and then reheat to see how it works out.
