Hi Robert- My oven takes a bit longer to preheat… closer to 20 minutes. 🙂 An hour is too long for a second rise, especially when you’ll be getting some major spring when you plop the dough into the pretzel boil. 🙂

In step two, you say let the bread rise while the oven preheats. Is that only a ten minute rise or should it be longer. Feels like it should be more like an hour.

Hi Patsy- Academically I understand that it is possible to use all sourdough starter for these, but I have not done so, so unfortunately I cannot advise you on the methodology on that!
