Hey there, Sereima! You can mail order this particular pectin! Or if you have a health food store nearby, you can usually find Pomona’s Universal Pectin there. I’ve even ordered it from Amazon!

That’s a bummer! I would’ve gone back in with more Pomona’s and tried thickening it up some more. If I had a whole batch of Michigan strawberries, I would cry if they didn’t gel!

I used it a couple of years ago with Michigan strawberries and it absolute would not gel. What a disappointment and a waste of gorgeous berries and mMY “thyme”.

This was a sensational recipe! I used it with the strawberries we just picked and wow! You can’t taste the balsamic and thyme by themselves but it makes the strawberry flavor pop. I used just 1.5 cups of sugar and I think next time I’ll cut that down by half a cup. It really doesn’t need much sugar at all. I love that about this recipe. And I’m a Pomona’s convert now too. Thanks!
