We’re not nut-n-raisin bread fans, either. Hmmm … 50 lbs. of zucchini … I’m going to need more flour. lol

That nutmeg flavor… mmm. I used less ww flour and more white: in this case, all purpose since I “accidentally” bought a 20 lb. bag.. Also more zucchini. Delicious and–blessedly–not too sweet.

Jen- Poor Matt. I hope you and the kids enjoyed it! Tuna muffins? Not bad when you mean to put the tuna on the muffin… But cooked in?

My Sweet & Saucy- I’m gifted with thumbs. What can I say?

Blair- I strive for the same thing and I’m so glad you liked the bread. Please let me know what the thumbs up count is after you try it out on your friends and their kids.

I found it through Stumble Upon and it turned out to be just what I needed. I am always trying to find something delicious, relatively nutritious, and homemade to share with my 2 year old, her friends, and my mom friends. I made this tonight and found it delicious. I think it will fit the bill for our playgroup tomorrow.

Love the zucchini bread recipe, we made it today! Matt has one complaint though….he didn’t get any. LOL! Also a little trick I learned for the english muffins for those who do not have the rings…save your tuna cans and wash good (I mean really good…trial and error on my part). They are the perfect size.

Give this recipe a try. I really, really liked it and didn’t feel so bad about the kids eating vast quantities of it since it was lower in sugar and oil.
