Hi Britt- I only do the add ins when blending the hummus. I do not put them in the jars when I’m processing because different items are more or less suitable for pressure canning. Olive oil is not a good thing to add before canning because it can become rancid so easily.

Made a batch today, everything went perfectly smoothly (experienced canner), all of my jars sealed no problem, however all have the liquid level sitting at about half, and gauging by the clarity of the water in the canner there wasn’t much siphoning. Was just wondering if you’d ever experienced this, since all the pictures you’ve included in the post show a beautiful liquidy concoction right up to the headspace. Hi Amy- I’d stick with the sesame seeds because I’m not sure how tahini behaves in the canning process. I’m not sure it would stay as stable as the seeds. You can always add a little more tahini to your hummus when you blend it!
