Hi Ashley- I’m afraid I don’t know exactly how you’d want to adjust the baking times if shifting to multiple smaller pans. You may want to watch them through the oven door for signs that you’ll want to test them. 🙂

You can also make maple sugar if you have real maple syrup on hand. It’s simple and quick! I made some while the cake was baking. There are many online recipes, but it’s basically boiling maple syrup to 262 degrees then taking off the heat and whipping with a hand mixer or wooden spoon until it cools and turns into sugar. Pass it through a sieve and use a coffee grinder for bigger crystals. I used a cup of maple syrup and ended up with 1 cup+ of maple sugar. The entire process took less than 20 minutes.
