I really like this salad as something different. It holds nicely in the fridge so perfect for meal prep and eat for lunch. I love the chewy texture of the farro. I have subbed spinach for the kale if that’s not your thing. Perfect fall salad.

Made the salad…..DELISH…….I shared it with my friend who is vegetarian and her husband who is vegan (sshhhh…..don’t let the vegan squad know he eats honey…teehee) Didn’t have the cheese but that could only make it better. They raved about it. My friend brought some to work and her co-workers raved. This is a keeper….

Hi Terry- You’re right. I accidentally left the instructions out for the remaining salt and zest. I have fixed it now! I used dried sweet cherries, but I think the tart will be lovely!

Incidentally, there’s a similar salad on mindbodygreen.com that I found via nwedible.com, but it had roasted delicata squash and a vinaigrette dressing–a bit different but similar notes. You should check it out. I tweak it to have less parsley and onions, and I make a bigger batch of the dressing, spooning it on only when it’s time to serve it. It’s sooo good.

HA! No rainy spring days? 😀 But yes, the farro does absorb all of the liquid, so you may need to tinker with the liquid amounts! It really is a great salad!
