Hi Grace! I see no reason that wouldn’t work, but haven’t personally tried it. Maybe if you tried some of them on a smaller scale before committing an entire batch it would be a good idea!

Hi Karen- I’ve never made pickled green tomatoes with this brine. I’m not sure how much brine you’d need since I haven’t developed a recipe for them. Are you talking fresh pickles or are you thinking of canning them? Because this would not be a suitable brine for canning.
