I tend to get fixated on one or two ingredients and try to introduce them into many of my dishes. Though mushrooms were a couple of months ago for me, I still dabble with them often. One of my favorite “healthy” snacks is to sear mushrooms with onions & bell peppers and eat them with melted cheese on top. *drools* It never occurred to me to put them on a sandwich. My mouth is LITERALLY watering as I sit here and ponder how good this would be for lunch/dinner when snuggled up in my jammies on a chilly weekend. Thank you so much for sharing this recipe with us!
