Hi Carlee- A couple of issues could have caused this. Did you cut the ends off of the cucumbers? There is an enzyme in the ends of cucumbers which, when not removed, can cause soft pickles. Also, if the cucumbers are less than super fresh, they can yield mushy pickles.

I noticed your recipe is a 1:2 vinegar to water ratio. Is this safe? Does the salt and garlic add to the safety? I didn’t add garlic to all my jars. I just want to be sure I do not poison my family. 🙂

I made pint jars and processed for 15 minutes like recommended from ball. What went wrong and are the sealed jars self stable still?
