Hi Radiance- It depends on how tightly you pack the fresh kimchi into your jars and whether you use the larger amount of cabbage to begin with. I’d say if you have 5 jars clean and ready to go, you’ll have more than what you need, but it’s better to have extra ready and not need it than to scramble when your hands are covered in kimchi paste. 🙂

Hey David- I do tighten the lids down in the fridge, but they still have a tendency to leak a bit, so keep them in a bowl or rimmed plate. I do top the jars off with brine to keep the veg submerged!

Just made this and had a question…do you ever tighten the lids down? Even after they’re in the fridge?
Little confused about the brine also, do I need to top off the jars with it to keep everything under water?
